Wonton Soup: Fast and Easy

Do you LOVE a steamy bowl of Wonton soup?

With the tasty ingredients at Trader Joe’s you can have a delicious bowl of Wonton style soup anytime without even leaving your house!

Here is my bowl of soup- I added some shredded zucchini, ginger and garlic to the broth- YUMMOOO!

Last week the weather started to get cooler here in the Midwest, and there were a few days of heavy rain so my cravings for a big bowl of soup came on strong!

My favorite part was that I could make this wonderful soup at home and watch some fun flicks – all warm and toasty!

Here is the super easy recipe: 

  • 1 box broth (I like vegetable broth, but chicken or beef would also work)
  • 1 bag potstickers or Gyoza – any flavor (We used Shrimp Gyoza this time)

Extras to consider:

  • Ginger root (grate into the broth)
  • garlic (grate into the broth)
  • sesame oil
  • soy sauce
  • leftover cooked vegies

What to do:

Bring your stock of choice to a boil in a large pot over medium heat.

Carefully slip the frozen Goyza into the hot stock and reduce heat to simmer.  Add any extras you are using to the pot such as leftover cooked vegies, garlic or ginger as well and cook for 10 minutes.

Serve in big bowls with a big spoon!

I also like to drizzle the top of the soup with a little sesame oil and soy sauce when I am serving it. You will see it in the pictures.

This is an AWESOME soup to make when you are feeling a bit under the weather too… Just a few ingredients and it will warm you up from the inside.

Roasted Yukon Gold Potatoes – Quick and Easy!

Roasted Yukon Gold Potatoes are one of those foods that we frequently have on had- ready to go for any number of meals or snacks. We like them for breakfast with eggs, on a salad or with leftovers for lunch, cold as a snack or warmed up with fish for dinner! Yikes! There are soo many ways to use these roasted beauties you won’t believe it.

Roasted Yukon Gold Potatoes

1. Preheat oven to 425 degrees

2. Clean potatoes by scrubbing them and rinsing them under water. I like to “dry” the potatoes on a towel too…

3. Cut the potatoes in 1/2

4. Toss potatoes in a bowl with a couple of spoonfuls of oil and the seasoning of your choice. You want the potatoes to be lightly coated in oil and seasoning. I like to keep it classic and just use sea salt- so that I can use the potatoes any way I want later on.

5. Place potatoes cut side down on a foil lined pan.

6. Place the pan in the oven for 20-30 minutes or until soft when you prick the potatoes with a fork.

 

7. Now turn the pan and place the potatoes back in the oven on a lower shelf for 10 more minutes. This will allow the potatoes to get nice color on the cut side.

8.  Ta- Da! That is all you need to do!  Your Roasted Yukon Gold potatoes are now ready to serve.

This easy way to Make Roasted Yukon Gold potatoes will also work for red potatoes or russet potatoes too.

Make Ahead Kefir Breakfast Parfaits

Super Easy Breakfast Parfaits with Kefir

Kefir is a wonderful fermented milk beverage that looks similar to yogurt, but packs more of a nutritional punch or pizazz! Kefir makes a fabulous and easy make ahead breakfast that we have been enjoying for a few months now. We make it the night before – and even make 2-3 days worth of breakfast jars at a time. This way in the morning, breakfast is essentially done, we just add some crunchy slivered almonds or sunflower seeds and a spoon.

Super Easy & An Awesome Start to the day!

 

Here is what we do:

  • Pour 1 cup Kefir into a wide mouth glass jar with lid
  • Add 1/4 to 1/3 Old Fashioned or Quick Oats, dry OR 1/3 cup cooked brown rice
  • Add 1 tsp chia seeds
  • Add 1 Tbsp ground flax meal
  • Add 1/4 cup raisins

 

Then we stir the whole thing together, put a lid on it, and stick them in the refrigerator.

When we are ready to eat (usually in the AM, but we did enjoy one as a “breakfast for dinner” type quick meal recently) we add some crunchy topping such as slivered almonds or sunflower seeds or even granola. Use your imagination & get creative and add what you like.

These Kefir Breakfast Parfaits are wonderful with fresh fruits instead of the raisins. We purchased the big box of peaches recently and cut up a peach each day- just lovely! Blueberries, raspberry and strawberries have also found their way into our breakfast and on occasion an over ripe banana too.

 

Added benefit: These parfaits seem to take me further so that I am less hungry!
