OR how to make leftover magic with a cheese pizza from Trader Joe’s!

Hey everyone! We had a pizza craving the other day and luckily had a frozen pizza from Trader Joe’s at the ready!

BUT instead of just heating and eating- which was the plan when we purchased this lovely pizza, we started to look at some of our leftovers and … well…. That is where the magic started.

We started by checking out all those little bottles in the fridge. You know the ones that have sun dried tomatoes, pesto and olives in them? They always sneak into the back in our fridge, so we started back there and brought them all onto the counter. Now we did not bring out any mustards (yes more than one…) but we did find a nice collection of olives (Trader Joe’s Kalamata) and a small amount of pesto (Trader Joe’s Pesto) to add to this pizza.

Next the vegetable drawer gave a donation of fresh spinach leaves and there even was some cooked broccoli that we chopped up to go on top.

Last, we found a nice piece of smoked Gouda cheese that we thought would go well with all the other flavors.

So what we really did to make this magical pizza was to place the frozen pizza on a foil lined pan, and spread some of the pesto, chopped olives, chopped broccoli and sliced spinach on top and then cover with thin slices of the cheese.

OK so this concoction was almost suffering from one too many flavors, but I must tell you that it really tasted FABULOUS! We were so happy that we had this Trader Joe’s cheese pizza around to pull together this crazy collection of leftovers, but WOW we just loved it.

So we really wanted to let you know that having a Trader Joe’s Pizza 4 Formaggi in your freezer is a great way to use up your leftovers!

How to Cook Brown Rice: EZ Way

We both love to eat brown rice, but sometimes cooking it can be a hassle. Because it is a whole grain, it does not cook up as quick as white rice. I like to plan about an hour to cook brown rice. Now this does not mean that it takes a whole hour to cook brown rice, but we cook the rice in shall we say a “slow way” and so I like to give the rice time to rest etc… We do like to eat Brown Rice as much as possible, but shhhh… we do keep a bag of white rice around, just for “fast food” because it does take a while to cook!

What we like to do is to cook a bigger batch of brown rice than we need for a meal so that we have leftovers. Brown Rice can sit covered in the refrigerator for a week and still be OK.

If you don’t think you will use it up, you can also freeze it in a plastic zipper bag. We like to use frozen brown rice in soups (just break off a chunk) or thaw the rice for an hour and use in a stir-fry. YUM!

Now, if you are new to cooking brown rice, we suggest that you start cooking a few small batches of brown rice to get a feel for this EZ way to cook brown rice.

What you need:

  • Brown Rice (we like Trader Joe’s Brown Basmati)
  • Water

How to:

In a small sauce pot with a lid, measure out ½ cup of brown rice.

Now add 1 cup of water and cover. Bring to a boil over medium high heat.

Let the rice cook for 20 minutes then check. You want to catch the rice about ½ way through the cooking process, so that about ½ the water is gone. This could take about 10-15 minutes more depending on how much is in the pan, where you live etc… You are waiting for the water to be absorbed to the level of the rice. You will still see the water, but it will not be higher in the pan than the rice. (See picture).

When the water is down to the level of the rice, and you see that nice big steam holes have developed, put the lid back on and turn off the rice. Let the rice just sit in the hot pan and soak up the rest of the water. This takes about 15 minutes. When you are ready to serve, the rice should be all fluffy and ready to just heat back up- for a few minutes.

If there is still some water in the bottom of the pan, just use heat with the lid off and the extra water will help steam the rice/warm it up for searving. In fact you will want to make sure there is some water in the pan when you heat it up to serve,  or your rice might stick to the pan.

We then take a fork and sorta “fluff” up the rice before serving.

Variations:

You can cook the rice in some chicken or vegetable stock if you like

You can sauté onions and garlic in olive oil before adding the rice and water. This adds a wonderful flavor to the rice.

Try cooking your brown rice this way and see if you don’t agree that this is an EZ way to cook Brown Rice at home.

Father’s Day: Barbecue Chicken in the Oven

Traditionally any summer holiday just screams for the barbecue, right? Well, perhaps not in Tucson. We have such wonderful weather to grill outdoors from say September to May. But in June, forget about it! It is just plain HOT!!

But that does not mean that when certain holidays come around, that we do not wish for and plan for those same enjoyable barbecue/ grill meals. Yummz! Grilled chicken, hotdogs or corn on the cob, potato salad, coleslaw etc… We just love it all..

We just cook a bit differently in the summer.

What do we do differently? We cook it all indoors. Now yes, we will admit, the toasty grilled flavor is gone… BUT that is OK because no one is ready to pass out standing in front of the hot coals either.

Here is our easy recipe for BBQ Chicken in the Oven.

What you need:

  • Chicken (we like to use chicken on the bone, but use your favorite pieces)
  • BBQ sauce (We love Trader Joe’s Bold & Smoky Kansas City Style BBQ Sauce)

How to:

Cover you baking dish of choice with foil. Spray with cooking spray or coat the foil lightly with oil.

Thaw the chicken first, if frozen, then rinse and pat dry with paper towels. Place chicken on the foil covered baking pan, and season lightly with salt and pepper.

Bake at 350 degrees until the chicken is just cooked. This can take between 30-60 minutes. The time will depend on what pieces of chicken you chose to cook. Bigger, thicker pieces take longer than smaller thinner pieces. Also chicken with bones takes a few minutes longer than boneless chicken.

It is easy to check to see if you chicken is cooked. Take the pan out of the oven and cut into the chicken with a knife and fork to peek. Chicken is fully cooked when the juice runs clear, and the meat is no longer pink inside.

When the chicken is fully cooked, brush the BBQ sauce on the chicken and let cook about 10 more minutes.

Variations:

-You can season the chicken before cooking with some cumin or Trader Joe’s 21 Seasoning Salute if you like

-You can cook the chicken the day before (hey in the AM when it is cool) and then heat up with the BBQ sauce when you are ready to eat.

3 Easy Father’s Day Breakfast Ideas

Are you looking for some easy Father’s Day breakfast ideas?  Here are a few of our favorite ideas for you to keep those Father’s happy.

1. Ranchero Breakfast

This is one of our favorite breakfasts and you can make it as simple or as complicated as you like. The ingredients can contain any of the following:

  • Eggs (cooked however you like)
  • Tortillas
  • Salsa/ Sour Cream/ Cheese
  • Cooked Chorizo
  • Black or Pinto Beans

We usually cook up two fried eggs and serve them with black beans and some soft, warm tortillas. On the side we have the salsa and sometimes sour cream and shredded cheese. Then we like to take some eggs, cheese and beans and roll it all up in one of the tortillas…. YUM!

2. Chocolate & Peanut butter Waffle Stackers

This one is quick and is also yummy! Start with two of your favorite Trader Joe’s frozen waffles per person. Heat them up according to package directions and then spread one with peanut butter. Sprinkle the peanut butter with some chocolate chips and top with the other hot waffle. The heat from the waffles should melt the chocolate chips. Serve with Maple syrup if you like…

3. Kielbasa and Eggs

Here again is a flexible and tasty breakfast that the whole family with enjoy. Cut a Kielbasa into 2 inch chunks, and then in half the long way (so it has a nice flat part to brown up on the stove). Then brown up the pieces in a pan until golden. The nice thing about Kielbasa is that they are already cooked so you only need to brown and heat them up when you want to serve. Also Trader Joe’s sells a Turkey Kielbasa so you can enjoy all the flavor, without all the fat that some other breakfast meats contain. Serve the browned Kielbasa with your favorite eggs (I love them with scrambled eggs) and toast.
